I use a Linux tablet every day. When you say tablet I think a computer with a stylus (pressure sensitive), not a keyboard free slate that has a touch screen and the only stylus option you have is a stick with contact foam at the end. There is a huge difference between what the ipad has and say a wacom screen with 256-500 levels of sensitivity. I use the thinkpad x41t and the x61t and I will probably get the x200t as the price goes down. I have not found anything more compatible out of the box with Ubuntu with equivalent hardware.

There is an android tablet that has a stylus that is pressure sensitive, do not remember what it is called, but the reviews were not good and the screen is small. The ipad, xoom, or any other pad that does not have a proper stylus is useless to me. I use xournal, gimp, inkscape and can even install oneNote on Ubuntu 10.04.
