Edit the custom error page you have created and add the following

This will remove the squid version and also the hostname from your error page.
Note that this is just a cosmetic change. If your auditors are smart
they can still get the version of squid from your http headers. So in
effect, there is no point in removing the version. Anyways, if that
satisfies them, do it.
