Without more details it's impossible to address your situation. To be quite honest, there is a huge chance that if you're seeing bad behavior on multiple servers, your application code might be to blame. All I can say at a very abstract level (which is all that I can really say without more details) is that there is nothing inherently wrong with CF that would make it crash all the time. I've used CF on lots and lots of applications over the years and there just isn't anything wrong with the technology at that level (i.e. there's no "CF sucks on servers with less than X process and Y RAM).
Now how it's used in specific situations and what you're doing can certainly have an impact. You didn't provide any details about your application, the load you're getting, or even the specs of your new server, so I'm not sure what other advice you could really expect to get at this point. If it's an *installation* issue, meaning you install CF and the base installation itself pegs your server the second you start it up, then Macromedia WILL help you if you have a valid license. If it's instantly pegging your server just by running it, that's an installation issue or server configuration issue of some sort and they offer free installation assistance. Just out of curiosity, when you say "Macromedia is of no help" how exactly did you contact them? Have you considered paying for a one-time incident with Macromedia if it's not an installation-related issue? I've done that on one occasion and I can say it was well worth the $150 or whatever they charge. They logged onto the box and fixed the issue practically immediately, and it was specific to our server configuration (basically it was a CF vs. Java app server issue), but they nailed it right away. Now if CF runs fine on its own and your *application* is making it crash, then likely your application needs some attention, which obviously Macromedia can't do for you. At that point you're going to have to go back through your app with a fine-toothed comb or hire someone who can troubleshoot things at the code level.
