ones you mentioned.  I personally prefer using a true webserver such as
Apache, with which you can easily create virtual sites for each of your
projects.  For instance, say I am working on www.davesawesomesite.com, I
create a hosts entry on my computer for www.davesawesomesite.local that
points to 127.0.0.1, then I create a virtual site in Apache that listens
for that host header.  Apache is free, awesome, and works on any platform.
If you are using a Windows server platform, IIS is another obvious choice
that can do the same thing.
