Does anyone here have such a setup, maybe even with a PPPoE/PPPoA
bridge with a Draytek Vigor? I'm having trouble making it work.

The FritzBox works without a hitch, even with IPv6, so I know my
connection data is good.

Drayteks are indeed uncommonly good, I had only one issue with a
built-in 60 sec timeout for any HTTP session which they verified
and acknowledged as a bug, but never fixed.
