If that server goes down then you get an alert that that server is offline by 
whatever mechanism you have watching your servers. Or if the monnit service 
stops, yet get notified that that service has stopped assuming that's monitored 
as well. In my case both the server being online and all autostart services are 
both monitored and I get alerts on outages, so the sensor service going offline 
sends an alert the same as an Exchange database being dismounted or the DNS 
service stopping.

In my case, the USB gateways are installed on my Hyper-V hosts. If those hosts 
go offline, I get notified about it via text and email

If nothing else this started a good discussion on temperature monitoring and 
alternatives.

Doing these things is the reason we're hopefully not uncompensated highly for :)

And what happens if said server where said device is plugged into USB goes 
down/offline?

I see a dependency there that might not be tolerable in some environments.

I would echo the APC environmental monitoring. Or you could go with a dedicated 
device like a netbotz (also owned by APC now).

What does the subscription cover? Is it just warranty/support?

Personally we use our Eaton UPS' external temp/humidity/etc monitor.

I figured I'd throw out a recommendation for a server room temperature 
monitoring tool I've used for several months now. I had a client buy a USB 
temperature monitoring kit + 1 additional USB gateway, and for about $250 
(includes 1 year of their $39/yr. premier subscription) total I am able to 
monitor two separate server rooms in two different buildings and get alerts. 
The alerting comes from their servers and you can check the status via web 
portal or even a mobile app. I have used their tech support a couple of times 
and it's U.S. based and excellent.
