LTSB is exactly what we need in our hospital. We don't want users going out to
the Microsoft Store to install anything. I don't need to spend time and effort
uninstalling everything to bring CB/CBB to the same point as I get starting
with LTSB.

Then there is the fact that CB/CBB requires being able to do in-place upgrades,
something impossible with our 3rd party encryption software.

IMHO starting with LTSB is a bad idea for standard users because it's quiet
limited, just use CB/CBB Build and use MDT2013U1 (when it will be working
again) to uninstall apps/features

Remember that LTSB is meant to be deployed to POS, Kiosk, or critical hardware

Start with LTSB and then block "Windows Feedback" and "Contact Support".

If you're going to use CB media then use PowerShell to uninstall all of the
uninstallable Universal Apps. Then use AppLocker to block access to those that
cannot be uninstalled (i.e. Windows Feedback...)

Has anyone started a list of the things to do so windows 10 is enterprise ready?

For example removing the junk applications like xbox, data leaking apps like
onedrive and cortana and other things?
