OMSA only lets me create the VD , it doesn't let me specify which bays will be striped or mirrored, I will take your advice and put the old drives in 3,4 and the new ones in 5,6

Put your old drives in bays 3 & 4 and the new ones in 5 & 6. Install and launch the tool and use the Create Virtual Disk Advanced Wizard.
