Brian you should talk with Mitch Denny as afaik he's been one of the key people behind Readify's TFS Now. Their environment uses a host of virtual servers to support the build and testing process afaik.

At this stage I know I cannot possibly run everything i want on the single server, but i don't use all services consistently..eg. some services aren't used for weeks on end.
