Let me second what David has said about the 2631 course. I have been asked to deliver this course numerous times and on each occasion I have said no. It is not that I can't deliver it, it's just that on every occasion it was basically selected because it was the only MS course that had anything to do with VSTS.
I have delivered the level 300 Deep Dive training that Pieter mentioned in his reply earlier on several occasions for the Microsoft Readiness Program and for a few customers as an onsite event and feedback has generally been really positive. This would probably be the best event for you. I will also qualify this by saying that I haven't looked at the course that Greg recommended so I can't say which one might be better for you. As far as training goes, I have basically had to develop my own material in many cases and spent the day today delivering a one day event on Application Lifecycle Management using VSTS. (Nothing like 2631). Tomorrow's course is a one day hands-on event on all the differences between VSTS2005 and VSTS2008.
