Actually, there is a book The No Nonsense Guide to Teaching Writing: Stategies Sturctures and Solutions by Judy Davis and Sharo Hill that has a unit on teaching poetry. It's quite lively with lots of good stuff in the appendix. They also have a website where you can get samples of student writing. I found of particular importance was the work they showed where students took their ideas from prose and put in them into poetry.
