All these p2p applications are creating a lot of connections to many different hosts on different ports.
So you should only deny specific connections you don't want and allow all other connections from your p2p software.
If the Little Snitch alert panel for p2p application appears, select "forever", "Any connection" and click on "Allow Forever"
Additionally you can add some optional deny rules manually:
p2pApp Deny any connection to port 80 p2pApp Deny any connection to some specific host-you-don't-like
