OK, sounds well researched.  I have friends that spend their lives fixing 
alternators and buying more and more generating equip instead of fixing 
their fridges.  I have 480W of solar and no genset or wind genny,  I very 
occasionally need to run the engine,  possible 3-4 hours per year for 
charging.
For the T'stat, the start current of the inverter could be a problem, they 
have a big capacitor that charges, an Automobile 12V relay would extend the 
current rating.  There is a company "R Parts" that has (expensive) 
electronic stats.
There have been reports of short compressor life on fridge compressors used 
on inverters.
