I've been using the standard 7-lb. folding grapple for ages, but not
exclusively. I rarely anchor the dinghy anyway, but there have been at
least two times when I just didn't trust the bottom or the wind and
current, so I hauled out my aluminum FX-23 (lunch hook for the big boat)
and used that. The dinghy was still there when I came back, so I guess
it was OK.

Related point worth considering: Cabela's sells a 1000' spool of
parachute cord - the real mil-spec stuff - for $40. That's a really
great deal, considering that it has a nominal breaking strength of
550lbs. and is less than 1/4" in diameter. Carrying a couple of hundred
feet of it in your dinghy allows you to have the dink a hundred feet
out, away from tilted-up outboards, nail-covered docks, etc. - but
retrieve it whenever you're ready to use it.

But you did, right there! I saw you!

Hmm, inflatable anchor. Sounds like a great idea. You could blow it up
to the exact size you wanted, anything from a dinghy anchor to one
suitable for a cruise ship... :)
