I think I was stumbling on getting the correct file name, I was confused by the name of the deb file. But then
|apt list --installed | grep -i proton|
|allowed me to identify the (obvious!) exact file name.|

The good news is that I've now got this working by means of installing the Proton Mail app from the Ubuntu app centre, then choosing Proton Mail via Ubuntu Settings>Default Apps>Mail.
