That's because Zyn is one of the MIDI-based plugins (along with  
Vestige and SF2player), i.e. you can bend all notes at once, but not  
individual notes. Limitation of the protocol, really.

Looks like Zyn has OSC more or less done, and some kind of MIDI  
mapping built on top of that (stumbled upon this while looking up info  
on the new NTK look):
