It's very much dependent on the purpose and situation... if you take it
too far, too much saturation sort of hurts the eyes, makes the image
look garish. And in some cases you'll want low saturation because it's
easier on the eyes. Ever try watching an old analogue TV with the colour
setting dialed all the way up? Looks horrible...

In the splash image I think the higher saturation works (as long as it's
not taken to the extreme) because there's a low-saturation gray
background which creates contrast with the colourful logo and draws
attention to it.

The same effect happens when you display the logo on a white background,
white has no saturation so it again creates a saturation contrast.
