To play MIDI, usually you'll have a default soundfont setup.

For starters, I'd recommend using a grand piano soundfont:
http://freepats.zenvoid.org/sf2/acoustic_grand_piano_ydp_20080910.sf2

You can set this option in your preferences.

When a MIDI file is played through Windows Media player (for example) it
uses some default soundfonts that come with the player.

LMMS doesn't ship with these default soundfonts, so you will get either 1.
No noise or 2.  The default soundfont sound.
