I do too, UUIDs cannot be avoided when you cover OS installation and fstab, as most (if not all) major distributions rightly identify devices with UUIDs in the automatically generated fstab file. I think that everything that concerns device naming, filesystem identification, fstab and mounting should be covered in LPIC-1 and that it should be considered prerequisite knowledge in LPIC-2.
