Check out RedMon from GhostGum software.

This will let you create a custom port that will give you pretty good
control over the jobs that come in. It was mainly done with the idea of
piping to Ghostscript, but they include another utility (redfile.exe) that
will redirect to a file. Full source is included, and so it's a trivial
operation to change the redfile program to name the files based on the
date.
