CPU: take the same that you would choose for a single user machine.
CPU is only interesting if you have CPU-intensive tasks,
like compiling big projects, image/movie rendering , sound & video encoding...

If you want more clients, then buy 2nd-hand PCs
thats cheap & much better for the environment than new PCs
LTSP is GREEN computing because it lets you use today's software
