Ian, I don't know why you are getting the error on the ddns-update-style, maybe something they've changed in the latest dhcpd.
But, for the problem with auto-detecting the NIC, you are using an ISA nic, and LTSP can't automatically detect what kind you have. Take a look at http://www.LTSP.org/instructions-3.0.html for more info on setting up an ISA nic.
