The server video card doesn't matter at all.

You don't even need a video card in the server, unless you
want to also use the server as a workstation.

The amount of video ram in the clients doesn't matter a whole
lot either.

It's mostly a matter of simple math.

If you want 1024x768 16bit color, that's 1024 x 768 x 2 = 1,572,864

If you want 24bit color, that's 3 bytes per pixel instead of 2.

If you want higher resolution, you just need to do the math,
to see if it works out with your card.

On a thin client, you likely aren't doing any fancy 3d rendering,
so don't worry too much about the amount of ram, other than making
sure you have enough for the resolution you want.
