Never touch a running system. But why not try 4.1 for a new one (if you're not going to start virtually tomorrow, but wait for the first week of bugfixes - remember, 4.1 is a beta version currently)?
In Debian stable 2-5 months x.org will NOT be - should I use (for example) stable_4.1(after released)+XFree 4.3? Why not/yes?
Which Xserver to use on the clients doesn't have anything to do with which one you use on the server. Don't matter about that, LTSP will do the clients' displays and you yourself may care for the server :-)
