I experience the same thing, however after upgrading from 6.10 to 7.04,
same server hardware. I think this started after some of the later
updates, I.e. the basic 7.04 was OK. (Sorry, but unable to pinpoint the
actual change that invoked this)

The quick (and dirty) way to work around it (until fixed) is to hit
ctrl-alt-backspace when it freezes. (Kills the x-session) You will then
return to the log-in screen, where you can do a restart etc.

I would look forward to a fix, but the issue is not very annoying as
most work is done on the terminals anyway.
