I see no reason *because of LTSP 5* for a scanner not to work... At
least, I can report that two scanners here are working successfully on
an LTSP 5 client (the two ones are on the same client, working at the
same time, through the network of course).

1. make sure the scanner is recognized by udev at pluging/powering
on ;
2. install libsane, libsane-extras and sane-utils in the chroot (on
Debian, substitue as apropriate for your OS) ;
3. configure the SANE layer in the chroot :
* comment all backends in /etc/saned.d/dll.conf ;
* uncomment the net backend and the needed backend for your
scanner ;
4. locally on the booted TC (i.e. you have to ssh to it, or login
locally), test with the sane-find-scanner tool. It should report
your(s) scanner(s).
For example (comments striped) :
futro4:/etc/sane.d# sane-find-scanner
[...]
found SCSI scanner "AVISION AV8000S 1.17" at /dev/sg0
[...]
found USB scanner (vendor=0x04a7 [XEROX], product=0x044c [DocuMate262]) at
libusb:003:003
[...]
=> from here, we know the scanners are recognized.
5. configure the network access :
* add 'localhost' in /etc/saned.d/net.conf (also for testing
purpose) ;
* add a '+' in saned.conf to allow all hosts from the lan to talk
to the scanner (warning: this has security implications) ;
6. test network 'visibility' of the scanner :
From the TC, but now in 'TC mode' (i.e. in the intended mode of
operation of the TC, which means from the LTSP server, through the
network), issues one of theses commands :

(N.B. 'xerox' and 'avision' here are just in house wrappers around
scanadf and scanimage respectively).
