We are doing lots of scanning with LTSP-5.2. I have this implemented in
a medical office with 2 scanners at each check-in station. 1 is a small
card-scanner and the other is a Fujitsu page scanner.
We installed the SANE packages into the chroot, and then installed the
micro-inetd package to run saned.
We chose not to run saned as a daemon, because we didn't want ALL thin
clients to run it. Just a few of them.
For those thin clients that need scanners, we added the following line
to lts.conf:
RCFILE_01="/etc/init.d/scanner.sh"
That file contains:

SANE_PORT=$(grep sane-port /etc/services | awk '{print $2}')
start-stop-daemon -q -b --start --exec /usr/bin/micro-inetd \
${SANE_PORT%%/tcp} /usr/sbin/saned

Then, you should edit the sane.d/dll.conf file to contain ONLY the
drivers you need. Otherwise when you connect to the thin client looking
for a scanner, there could be a long delay.
Also, don't forget to modify the sane.d/saned.conf file to allow
remote connections. You can add IP addresses to that file, or put a '+'
as the last line, which will allow any host to connect to saned on that
thin client.
If you have trouble after that, then I'd double check to make sure your
scanner is supported by the latest SANE package. Try it on a full Linux
box to verify that it works. If it works there, then there's no reason
it shouldn't work on a LTSP-5.2 thin client.
