The answer you got is only 1/2 correct. If the monitor is asked for its specs (EDID) it will overrule anything you specify unless you put a 'Don't ask for EDID' in your xorg file. Since you are using a virtual machine the graphics card is probably 'unknown' or vesa. In both cases you cannot do better than 800x600.
