Graham, First, HP thin clients cover a number of processor architectures and network cards so one has to be quite specific about which model is being discussed.
Centos 6 won't support many older HP clients with Via cpus (e.g your t5700s) because it requires i686 compatible cpus which the Via aren't. It also won't support some newer Atom cpu clients like the t5740 I'm typing from but for an entirely different reason - the Broadcom nic doesn't play well with the Centos kernel and won't initialize properly during the boot process so booting fails. The answer to both issues if you are already running a Centos LTSP server (I'm running both a mongrel Fedora 19 and a EL6 (Scientific) servers with LTSP) is to create a i386 boot image from a distro like Debian. I created a Debian 7 LTSP server VM, created my client files and copied the relevant parts (e.g /opt/ltsp/i386_debian, /var/lib/tftpboot/ltsp/i386_debian, etc.) There were a couple more nuances with my particular client I ran into so let us know if you are running an Atom client.
