I'd rather hack a PS/2 than an Xbox, but the 'linux kit' for the PS/2
included more than just the software, and was priced at $300 (in the
US).
As you know, they've sold out. For far less, you can buy a new Xbox (or
spend even less and get one that is 'used'), and hack linux on it
pretty easily.

Hacking linux on the PS2 (any flavor) will involve teaching your
students about "non-Intel" platforms. This is a good thing IMO, but
does introduce some initial complexity (cross-compilers, etc.) The
Xbox is a PC in its heart-of-hearts.

I'm not sure the if the PSP uses 'WiFi' (its not WiFi Certified!) in
infrastructure or 'adhoc' (IBSS) mode. Linking 2 units for
head-to-head play would seem best via adhoc mode. Linking to your
home 'router' is likely best in infrastructure (BSS) mode.
Also, goodness only knows what the PSP uses for an 802.11(b) chipset.
Driver support could be... challenging. Here are photos of the WiFi
