I usually just copy all the mail files. To read them, simply restore. Depends on your mail client. (i.e. use sane, simple one and your life will be long and happy)

Hello all,

There is something on which I need a few pointers.
My mailbox is quite heavy now and I sincerely believe it is time to
relieve the server. However, I would like to keep some of the mails for
future reference on a CD and in a format which is readable by a web
browser or an ordinary word processor.
I have tried googling around but all pointers lead to POP programs
which simply transfer them to another hard disk and in a format
readable only by them!!
I would be glad if you shed some more light on this.
Thanks!!
