http://openmoko.com/ is off course the preferred phone on this forum. All 
software is completely open (and part of the hardware, too, i think). They 
even made it into the Google Summer of Code this year. Cool Beans, is now the 
expression in our office:

(but a phone with a keyboard is also really really nice, i find personally)
