Using fetchmail to download mail from a catchall POP3/IMAP mailbox has
worked well for me in the past when I didn't have a public IP. It can
sift through and work out who the mail is for via the from field even
though all the mail is essentially stored in one box. I would advise
getting a mailbox as large as money can afford + get a spam/antivirus
service.
It then delivers to the MTA of your choice and from there to users
mailboxes. i.e.
<Mailbox Hosting Provider>--------<via
YelloLine>-----<Fetchmail>-------<Postfix>
I'd also recommend routing the outbound mail via MTN's SMTP servers to
speed things along.
Primary and Backup MX's in this configuration are the concern of your
hosting provider so making it slightly simpler to maintain.

records. Can I use one domain and mailbox from a provider in town to backup
the mx records of this mail server I plan to setup? or am I dead in the
water with this?
