I would second that, if you want to build a customized version of Ubuntu Remastersys is the way to go. Just add the ppa, install and run on your customized build. It has two options distro and backup one saves all your settings including /home the other doesn't, so giving you a clean build each time.
That having been said I have not tried it with 11.04 so not sure if any gotcha's exist. Personally I still hand out 10.04 LTS.
