Another way is to get the Ubuntu Minimal ISO. It's about 200MiB and does not pre-install a graphical environment or any related applications at all. Then you can add everything you want from the bottom upwards. This is what I did; I now run Ubuntu with the Awesome tiling window manager and some assorted utilities.
