Barcode scanners usually (but not always) identify themselves as standard HID input devices, in effect emulating an ordinary keyboard, so these pose no problems to Linux. Thermal printers with a serial port interface are trickier, but it is usually fairly trivial to Google some documentation on the DIP switches and figure out the correct byte sequences for initialisation and paper cutting and so on. Not sure about the (slightly) newer USB ones, but I couldn't imagine why they wouldn't work perfectly fine.
