Thank you for pointing at Kenneth Sparr's article, which is a must-read on this field. As for your wondering, there's no hard evidence available (except the Mest lute and the Wolf lute), as far as I can see. Most 12c double headed lutes, according to Schulze-Kurz (who wrote on The Lute and its Tunings During the 17th Century), were probably rebuilt and converted later.
