The number of courses depends on the type of lute (renaissance, baroque, etc), the historical period in question, and the repertoire you want to play.
I've seen lutes from 6 to 13 courses. In general, the number of courses increased as the decades and centuries rolled by. If you visit the websites of lute builders, you will learn more.
