The ubuntu server guide for 12.04 will have pretty extensive docs.  You
can preview them in the source tree - bzr branch lp:serverguide (look at
./serverguide/C/virtualization.xml).  Eventually it'll be at
https://help.ubuntu.com/12.04/serverguide/C/index.html .
