LXDE tries to be loosely-coupled and standards-compliant so, whether or 
not it provides an application, you should be free to use whichever you 
prefer.

For example, back when I was on Gentoo, I chose to use Audacious Media 
Player rather than LXmusic... then I discovered that the Lubuntu 
maintainers agreed with my decision and offered it in their default loadout.

I think Pidgin IS basically the recommended multi-network IM solution 
for LXDE. I know I've never seen anyone else bundle anything different.

As for Evolution, I use Thunderbird but, unless the devs really dropped 
the ball and somehow require GNOME 3 to not only be installed, but to be 
running now, there shouldn't be any problem using it.
