The LaTeX command \ddot{u} does the job.

Switch to TeX mode inside mathed (entering a backslash), then type
ddot, a space, and the u. Et voil`a !
You don't need a \mbox, but perhaps a \textrm{} or \textit{} around all
that, to get a text-like spacing.
