Well, that certainly makes sense. I hadn't considered that as my focus was
on the document itself. Perhaps the devs can make a note of this in the User
Guide (I think that's the manual in which I found the chapter on tables). If
this information was there it didn't register with me at the time as I was
focused on figuring out where to find the mulit-table tab (until I
discovered a right-click on a row).

As soon as you put it in a float, that’s when I get the effect you
describe, so try Inserting the Table on a blank paragraph in normal text
mode.

I wonder if there's a way to convert a floating table to a static one
without needing to re-create the whole thing.

Someone else will have to help you regarding table numbering and
captioning, though. Perhaps the longtable manual can help.

Captions can be added, if I correctly recall, from the Insert menu. I don't
know that numbering cares if tables are static or floating.
