I'll look more closely at Koma-script Book (which seems more suited of 
the two that you suggested).

I had assumed that there might be a latex book class (with relevant 
sectioning) that was used by the occasional commercial publisher (to 
layout the book in standard book publishing format) but I guess 
commercial publishers use commercial packages such as Quark to typeset 
their books.

did you try book (AMS) or book (Komascript)?
on the other hand you can write \frontmatter, \mainmatter
backmatter in tex (red).

no, it's the standard book class from latex.
