Thanks Herbert, I'll look more closely at Koma-script Book (which seems more suited of the two that you suggested).
I had assumed that there might be a latex book class (with relevant sectioning) that was used by the occasional commercial publisher (to layout the book in standard book publishing format) but I guess commercial publishers use commercial packages such as Quark to typeset their books.
