You can actually add some symbols yourself. Copy default.ui into your
~/.lyx/ui/ directory, then find the "Toolbar" section, and add something
like this before the "End" token :
Newline
Icon "math-insert \sum"
Icon "math-insert \prod"
End
LyX 1.4 has better support for toolbars, though there's still some work
needed.
