I tried it again, and you know what, you are absolutely right. It both preview and update work properly with either specifying the full path or using the "open -a" method. Go figure, must have had things configured incorrectly or something the last time I tried the full path method.

Just got it myself to try out previewing with TeXShop. It never occurred to me to use TeXShop as a previewer, and I had resigned myself to the fact that I would just have to live with the fact the Preview/Acrobat does not support "update".
