I have always had problems to access to examples and also to the templates since I have switched to OSX. I have observed that LyX2 look for the templates in the folder ~/library/Application support/Lyx2.0 So, I have copied the examples and the templates folders from the application bundle to this location. Now I can access both using File/"Open from template" menu item (I am translating the names from French so they can be slightly different for your system).
