Is there no current-technology replacement possible?
I have browsed the 'net and seen 40x8 / 240x64 screens, but I suppose the size
doesn't match. And the connectors. Maybe software problems too... (?)
Anyway, in order to prepare for the future, where replacement parts will be
rare, maybe something to investigate.
And, maybe in using modern tech, some benefits will appear like: backlight
and/or better readability (higher contrast) ?

Yeah, that's certainly an option and I do have a couple of dead M100s but I was
kinda hoping to repair those one day instead of stripping them for parts.

I've grafted a 100 screen into a 102, you just have to solder the wires to the
flex cable traces. That is, if you have a m100 screen laying around.
