As a matter of fact one of my early prototypes sort of did something like that: a small board that had sockets for both a 32KB RAM and ROM chip upside down and beside the original system ROM socket. Unfortunately a couple of small caps got in the way and had to be relocated, so it wasn't entirely plug and play.
