The bitchin100 order page for Stephen Adolf (
https://bitchin100.com/wiki/index.php?title=Ordering_Information) still
lists RAM cards for both the M100 and the T102, as well as the Rex#.  I
ordered a couple of upgraded slabtops from him earlier this year which
included these upgrades, so I know they were still available fairly
recently.

The REX# Doesn't expand the RAM on the 100/102, but it does let you store
your RAM in the REX# and swap for another stored bank, essentially giving
you multiple banks of up to 32k that you can swap between.  Of course,
you'll want the RAM cards to upgrade your base RAM to that 32k to begin
with.
