The note-taking app I'm using on my Motorola Milestone 2 is simply called Notes.. it works pretty well. For more information go to https://market.android.com/details?id=com.kodexo.notes&feature=also_installed.

An app that I've been using a lot lately is Dictator from eScape LLC. You use your voice to take notes and don't have to type. It's very accurate and easy to use. If you like you can store your notes as text but you can also store them as mp3 files. At this point there are still a few unlabelled buttons but as from 12 October with the new release of the app all buttons should be properly labelled. Though the app is not free, I think it's well worth its price of $1.50.
